Overview

Can Tho City is the largest city in the Mekong Delta, nicknamed the 'Western Capital' (Tay Do). It is the political, economic, and educational center of the Mekong Delta, home to Can Tho University (a hub of agricultural research) and a branch of IRRI (the International Rice Research Institute). The Cai Rang floating market is a world-famous tourist spot.

Functioning as a collection and processing hub for agricultural products, rice-milling factories and pangasius processing factories are concentrated here.

Features of agriculture

Can Tho City's own farmland is limited, but it is extremely important as a hub for rice milling and export. Raw rice gathered from the Mekong Delta provinces is milled, quality-inspected, packaged, and exported in Can Tho. Many pangasius processing companies (Vinh Hoan, Hung Vuong, etc.) also have factories here.

The Faculty of Agriculture at Can Tho University is a hub for agricultural research and human-resource development in southern Vietnam, carrying out research on improving rice varieties and farming technology.

Main agricultural products

Rice (milling and export hub), pangasius (processing hub), fruit (collection point), vegetables, flowers

While running a food brand in Kyoto, I have worked on products that bring out the appeal of ingredients, such as dried vegetables and vegetable powders. I am now in my second year living in Vietnam, where I am also involved in coffee production on the ground, learning the whole process from cultivation to processing and flavor development. Out of a wish to deliver foods people can enjoy with peace of mind in everyday life, I value products whose production background and the faces of their makers are visible. Drawing on the appeal of both Japanese and Vietnamese food cultures, I aim to bring a little richness to daily life.
