Overview

Home to the ancient capital of Hue, Thua Thien Hue is a historic region that flourished as the capital of Vietnam's last dynasty (the Nguyen Dynasty). The royal palace of Hue is a World Heritage Site, and the region is also known for its distinctive court cuisine.

With three types of terrain—the fertile plains of the Perfume River (Huong River) basin, the mountains of the Truong Son Range, and the coast facing the Tam Giang Lagoon—it supports diverse agriculture.

Features of agriculture

Rice farming is the core industry, and "Hue rice" is known for its high quality. In the Tam Giang-Cau Hai Lagoon (the largest lagoon in Southeast Asia), traditional shrimp and fish farming takes place, increasingly linked with ecotourism.

In the mountains, acacia and eucalyptus plantations thrive, and wood-chip production is an important export of this province. The lotus tea (sen tea) for which Hue is famous is also traditionally produced.

Main agricultural products

Rice (Hue rice), lotus tea (sen tea), aquatic products (shrimp and fish from the Tam Giang Lagoon), wood chips (acacia and eucalyptus), corn, cassava

While running a food brand in Kyoto, I have worked on products that bring out the appeal of ingredients, such as dried vegetables and vegetable powders. I am now in my second year living in Vietnam, where I am also involved in coffee production on the ground, learning the whole process from cultivation to processing and flavor development. Out of a wish to deliver foods people can enjoy with peace of mind in everyday life, I value products whose production background and the faces of their makers are visible. Drawing on the appeal of both Japanese and Vietnamese food cultures, I aim to bring a little richness to daily life.
