Vietnam is the world's second-largest coffee producer after Brazil, and the central highlands in particular play a central role as a major producing area for Vietnamese coffee.

This article explains in detail the seven secrets behind why coffee cultivation in Vietnam's central highlands has succeeded to this extent. From the advantage of volcanic soil, to Robusta the strategic choice of the crop, and recent efforts to improve quality, we concretely introduce the reality of a world-class coffee-producing regions producing region.

The history of Vietnamese coffee and its trajectory of rapid growth

Vietnam's coffee cultivation began during the French colonial era. At first, Arabica cultivation was attempted in the north, but output did not grow as hoped.

The turning point came in the 1980s. Under the Vietnamese government's lead, large-scale cultivation of the pest-resistant Robusta Robusta began in the central highlands. This strategic shift would greatly change the fate of Vietnam's coffee industry.

The 1986 Doi Moi policy When Doi Moi introduced a market economy, agricultural production expanded dramatically. Land-use rights were granted to individual farmers, and their motivation to produce rose. As a result, in the short span of about 20 years, Vietnam grew into the world's second-largest coffee producer.

Currently, Robusta accounts for the large majority of Vietnam's coffee production. With its powerful body and bitterness, Robusta is prized worldwide as a raw material for instant coffee and blends.

 Source

Prepared from UCC Ueshima Coffee Co., Ltd., "Vietnam, a Coffee Powerhouse Boasting the World's Second-Largest Output: The Coffee-Making That Supports Its High Quality"

(2020)

Secret 1: The geographic advantage of the central highlands

Vietnam's territory runs long from north to south, and the north, center, and south differ greatly in weather conditions. Among them, the central highlands is a region with a harsh yet rich natural environment, ranging from 200 m lowlands to highlands and uplands of about 2,500 m.

The cultivation diversity brought by elevation differences

A major feature of the central highlands is its range of elevations. It has conditions rare even worldwide: hardy Robusta grows in the lowlands, and Arabica, which is choosy about its growing environment, grows in the uplands.

The region centered on Dak Lak province in particular has the elevation and temperature conditions suited to Robusta cultivation. Meanwhile, the area around Da Lat city in Lam Dong province is a highland zone at 1,500 m elevation, drawing attention in recent years as a major producing area for Arabica.

The blessing of a tropical monsoon climate

The central highlands belongs to a tropical monsoon climate, with distinct rainy and dry seasons. This climate pattern creates an ideal environment for coffee cultivation. In the rainy season, abundant rainfall promotes the growth of coffee trees, and in the dry season, harvesting can be done efficiently.

Secret 2: The power of the volcanic "basalt soil"

The central highlands is spread with red volcanic soil called "basalt soil." This soil is one of the important elements that support the quality of Vietnamese coffee.

Volcanic soil is rich in minerals and drains well, giving it characteristics well suited to coffee cultivation. Robusta in particular pairs well with this soil, producing beans with a bold flavor.

The advantage of basalt soil is not simply that it is rich in nutrients. It strikes a good balance between moderate water retention and drainage, providing an environment in which coffee tree roots can grow healthily. These soil conditions underpin the stable output and quality of Vietnamese coffee.

Secret 3: Strategic specialization in Robusta

Behind Vietnam becoming a coffee powerhouse lay a clear policy of strategic specialization in Robusta. While Arabica is highly valued on the global coffee market, Vietnam focused on Robusta.

The practical advantages of Robusta

Robusta is resistant to pests and diseases and is relatively easy to manage. Compared with Arabica, it yields more and has strong tolerance to climate change. These traits are a major advantage in large-scale plantation management.

In addition, Robusta contains about twice the caffeine of Arabica, making it suitable as a raw material for instant coffee. As global demand for instant coffee expanded, Vietnam's Robusta secured a stable market.

A firm position in the global market

Today, Vietnam boasts one of the world's largest shares of Robusta production. It shows a particularly strong presence in the Robusta market.

 Source

Aizawa Securities, "Latest Vietnam Update coffee output ranked second in the world"

Compiled from (2025)

Secret 4: Innovation in sorting technology and quality improvement

In the early 2000s, a major change came to Vietnam's coffee industry. Machines were introduced into the green-bean sorting process, improving the precision of quality control.

The main criteria that determine the value of coffee beans are the degree to which foreign matter such as stones and twigs, and defective beans such as broken or immature beans, are mixed in. The introduction of machine sorting made it possible to remove these impurities efficiently and accurately.

The improvement in sorting technology raised the international competitiveness of Vietnamese coffee. Its consistent quality was recognized, and exports to advanced markets such as Europe and Japan expanded.

Secret 5: Efficient management of large-scale plantations

In the Central Highlands, large-scale plantation management dating back to the French colonial era has developed. Vast coffee farms were opened especially around Buon Ma Thuot in Dak Lak Province.

A production system that leverages economies of scale

On large plantations, mechanization and efficient allocation of labor cut production costs. Management takes advantage of scale, for example by developing irrigation systems and bulk-purchasing fertilizer.

Large-scale operations also show their advantage in securing labor during the harvest season and in running processing facilities. This makes it possible to supply large volumes of consistent-quality beans to the market.

Strengthening the industry's foundation through government support

The Vietnamese government has positioned the coffee industry as an important source of foreign currency and has rolled out active support measures. Wide-ranging support covering infrastructure development, technical guidance and export promotion has backed the industry's growth.

Secret 6: A new challenge in Arabica cultivation

Having established a global position with Robusta, Vietnam has in recent years also put effort into Arabica production. This move marks a new stage in the evolution of Vietnam's coffee industry.

Arabica cultivation in the Da Lat area

Da Lat City in Lam Dong Province sits on a highland plateau at an altitude of 1,500 m and has a cool climate suited to Arabica cultivation. The area produces high-quality Arabica beans that are fruity and have acidity.

Arabica from Da Lat is gaining popularity especially among young people in Vietnam. In Hanoi and Ho Chi Minh City, new-wave cafes serving it black are opening one after another, and a new coffee culture is taking shape.

Improving skills through quality contests

Since 2015, the UCC Group has held a quality contest for Vietnamese Arabica. In this contest, quality inspections are carried out on sample beans provided by each farm, and outstanding farms are honored.

Such efforts boost growers' motivation and promote technical innovation, contributing to an improvement in the quality of Vietnamese coffee as a whole.

 Source

Prepared from UCC Ueshima Coffee Co., Ltd., "Vietnam, a Coffee Powerhouse Boasting the World's Second-Largest Output: The Coffee-Making That Supports Its High Quality"

(2020)

Secret 7: A strategic approach to international markets

The success of Vietnam's coffee industry is also supported by a strategic approach to international markets. It is evolving its business step by step, from large-volume exports of green beans toward expanding exports of processed products.

Building strong relationships with major export destinations

The main export destinations for Vietnamese coffee are advanced countries such as Germany, the United States, Japan and Italy. In these countries, Vietnamese Robusta beans are used as an important raw material for instant and blended coffee.

Germany in particular is a major export destination, and beans imported from Vietnam are re-exported across Europe. This stable export route supports the sustained growth of Vietnam's coffee industry.

Efforts to raise added value

Currently, Vietnam aims to shift from a "raw-material supplier" to a "coffee-processing country." In 2018, UCC established a local subsidiary in Ho Chi Minh City and carefully selects only beans that meet its own quality standard, "UCC Quality," to export to Japan, establishing such a system.

Domestic production of instant and regular coffee is also expanding, and the share of exports as processed products is gradually rising. This movement marks a new growth stage for Vietnam's coffee industry.

 Source

Institute of Developing Economies, "Challenges for Vietnam's Coffee Industry: From Raw-Material Supplier to Coffee-Processing Country"

BASE COFFEE, "Let's Learn About Production Areas!
